An organization, named FSSAI, has been established under the Food Safety and Standards Act, 2006 (FSS Act), which is responsible for monitoring the food businesses in India. FSSAI is an acronym for the Food Safety and Standards Authority of India.
Every food business unit in India, whether indulged in manufacturing, processing, distributing, or selling food products, must mandatorily obtain the registration or license, depending on the size and nature of the business. It is a 14-digit number that is printed on all food products of the operator. It imposes an obligation on the operator to maintain the food quality.
Types of FSSAI Registration/License
Registration
Any food business operator with an annual turnover of up to 12 lakh is eligible for basic registration under FSSAI. Usually, start-ups go for basic registration due to the unsurety of turnover. The minimum period of registration is 1 year and the maximum period is 5 years.

State License
Generally, food business operators who have annual turnover between 12 lakh to 20 crores are eligible to obtain a license from the state government. The minimum period of the license is 1 year and the maximum period is 5 years.
Central License
Food business operators who have an annual turnover exceeding 20 crores are eligible to obtain a license from the state government. All importers and exporters are required to obtain the license. The minimum period of the license is 1 year and the maximum period is 5 years.

Consequences of Non-Compliance
Acquiring a registration or license under FSSAI comes up with many benefits like the building of goodwill, ensuring food safety and quality, creates good consumer response, thereby helping in the growth of the business. However, failing to comply with the rules and regulations of FSSAI by the license holder can cost him too much. The officer, after conducting the inspection, might issue an improvement notice where ever required. If the operator is unsuccessful to abide by the improvement notice, then the officer, after providing an opportunity of being heard, may cancel the license.
